
Ingredients
300-320g All-Butter Puff Pastry
200g Fresh Spinach
125g Cream Cheese
75g Feta Cheese, Crumbled
1 tsp Garlic Powder
½ tsp Onion Powder
½ tsp Fine Salt
½ tsp Black Pepper
1 Egg, Beaten

Preparation
1. Wilt the spinach
Heat a large frying pan over a medium heat. Add the spinach and cook for 2–4 minutes, stirring occasionally, until fully wilted.
Transfer the spinach to a bowl and allow it to cool slightly. Once cool enough to handle, squeeze out as much excess liquid as possible.
2. Make the filling
In a bowl, combine the spinach, cream cheese, feta, garlic powder, onion powder, salt, and black pepper. Mix until evenly combined.
3. Prepare the pastry
Unroll the puff pastry and cut into 12 equal squares, approximately 8cm x 8cm.
4. Shape the spinach puffs
Place approximately 22g of filling onto the centre of each pastry square, leaving a small border around the edges.
Fold one corner diagonally over the filling to form a triangle. Press one of the open edges together firmly, making sure there are no gaps. Place on a lined baking tray
5. Egg wash
Brush the tops of each spinach puff with the beaten egg.
6. Bake
Arrange the spinach puffs on the lined baking tray, leaving space between each one.
Bake at 200°C for 20–25 minutes, or until puffed and golden brown.
7. Serve
Allow the spinach puffs to cool for 5 minutes before serving.
