125g Plain Flour
75g Unsalted Butter (melted)
75g Light Brown Sugar
2 Eggs
2 Very Ripe Bananas (mashed)
4 tbsp Clear Honey
1 tsp Baking Powder
¼ tsp Bicarbonate of Soda
1/4 tsp Salt

Preparation
Make the banana mix
Whisk the melted butter with the eggs, then add the sugar and mix until smooth.
Pour the butter mixture into the mashed bananas and mix until combined.
Make the batter
In a separate bowl, combine the flour, baking powder, and bicarbonate of soda.
Add the banana mixture and gently fold until just combined.
Portion & bake
Line a 12-section tray with paper cases, then divide the batter evenly between them.
Give the tray a quick tap to settle the batter.
Bake at 160°C for 20–25 minutes, until risen and just firm to the touch.
If using a thermometer, aim for 95–98°C internal temperature — avoid going past 100°C.
Finish
Drizzle the honey over the muffins while still warm and let it soak in.
Serve warm or cold.
